1. Define your production capacity requirements
How many grain do you want to process one year? How many malts do you want to get one batch? How many malts do you want to produce one year? Different malting systems will be correspond to production scales.
2. Stable sources of high quality grain raw materials
For breweries and whisky distilleries, barley is the primary ingredient in beer and whiskey. Many breweries and whiskey distilleries purchase barley malt from malting company, local malthouse, or malt distributors. There are also farm-based malt mills, breweries, or other farm-based malt mills.
Where will you get your grain? If you are a farmer and grow your own barley, then this question can be ignored. Otherwise, you need to ensure a stable supply of raw materials. This could be achieved by maintaining stable partnerships with local or surrounding farms.
3. Product Catergories
Who will be your customers? Breweries, whisky distilleries, or milers and bakeries? Do they need special malt, such as crystallized malt, chocolate malt, peat smoked malt, etc.? If so you might also need malt roasting equipment and peat smoking equipment.
